Split Creek Farms and John's Custom Meats offers premium beef humanely raised on our small family farm in Kentucky. Beef are pastured most of their lives and free finished on a mix of grains and forages in paddocks. Our beef are never locked up and are free to recive plenty of sunshine and fresh air with free mobility. Our beef consistantly grade USDA Prime on the rail or USDA Choice (when requested). We process our own cattle under USDA Inspection at our own on farm state of the art processing facility. All of our beef are USDA Inspected and USDA Graded. We also test all of our beef for ecoli to ensure added safety measures. We dry age our beef for a minimum of 14 days in a temperature controlled dry aging cooler. We fabricate the cuts into retail ready portions, vacuum package, and quick freeze at -20 degrees F below zero to lock flavor and freshness. Our ground meats undergo a fat analysis and consistently test in the 83 to 87% lean range. Our gound meats are NEVER mixed. All are singly sourced and fully traceable. We also make bologna, jerky, and various other value added products.
