Paso Vino is a very popular variety, a Spanish-style hard cheese with hints of wine. The ranch had been a dairy and creamery over 100 years ago, founded in 1870 as a cattle ranch and part of the Harmony Valley Creamery Association. It changed hands through the years but has returned to its dairy farm roots.
