About R & A Oyster Company, Inc.
At R&A Oyster, we sell over 500,000 oysters per week, offering a range of packaged oyster products, each suited for a different type of serving and food preparation use. Our mission is to supply our customers with the finest oysters in the Gulf, precisely as needed. Our live, in-shell oysters, are pressure-washed to remove dirt and mud, then hand-graded to remove all excess pieces of shell and muscles. Available in three different weights (30, 40, and 60 lbs), with 30 lb boxes as our standard size. We pick daily so that only the freshest oyster meat goes into our Capt. Fox brand gallon containers. Our product offerings also include freshly frozen “pillow pack” gallons of oyster meat. Using our state-of-the-art High-Pressure Processing (HPP) machine, the oysters are individually-wrapped in our Capt. Fox brand green rubber bands. The bands keep the shells closed with the oyster’s original flavor and juices sealed inside. We wash and pre-shuck our oysters on the half shell, then run them through our Individual Quick Freeze (IQF) machine.
